The proprietors at Le Tertre are so fond of the travails and rewards of Botrytis wine, that they have turned their entirety of their acreage to Sauternes. Harvesting takes place grape by grape to include only those berries which are Botrytised and perfect for the purpose. Vineyards are picked over several passes among the vines at different times throughout each vintage, to apply the painstaking pruning and selection methods which are unique to the Sauternes region.
